Is it bad that I just don’t feel like writing a preview for Sunday’s Bills-Browns game? The matchup just seems so…lackluster. I’m not saying I expect an easy game or that the Browns couldn’t pull out another win like the last pathetically low-scoring meet up a few years ago, but it just doesn’t fill me with overwhelming elation and/or dread like other weeks.

I’m a little concerned about the offense. Now that it’s fired up it needs to maintain the momentum. Movement…down conversion…scoring. Movement…down conversion…scoring. Movement…down conversion…scoring. It just seems like Cleveland’s defense has similarly been on a roll with sacks and turnovers. Sigh. I have faith.

On defense, Mario Williams and Kyle Williams need to continue leading the pass rush and rattle Brandon Weeden, who has been up and down. Bills cornerbacks should keep an eye onWR Mohamed Massaquoi, the only receiver I know by name.

Can we move on to food now?

If you’re trying to save money like me, watching the game from home where you don’t have access to a bar full of beer specials is kind of necessary. You can feel like less of a loser by making fun snacks to indulge in, just in case you’re pushed to eat your emotions (be that in a celebratory or despondent sense).

Chicken wings are too much work but I always crave them. Instead, I made these buffalo chicken nachos once and am addicted. They don’t even have to make you feel guilty, either.

You need:

Boneless, skinless chicken breasts

Frank’s Red Hot

Lettuce, shredded

Non fat plain yogurt or reduced fat sour cream

Pepper Jack cheese, shredded

Tortilla chips (I like multigrain or the Archer Farms blue corn ones from Target)

What you need to do:

First, boil the chicken until it’s cooked. Using two forks, shred it until it looks like pulled pork. It’s easier than it sounds and kind of satisfying, like peeling dried glue off your fingers in kindergarden.

Next, toss the chicken in Frank’s. Decide the amount based on how much heat your taste buds can handle.

Spread the chips out on a baking sheet (or plate if you’re solo) and layer the chicken on. Then add the lettuce. Finish it off with the cheese and bake it at 400 degrees until the cheese is melted. Dollop the yogurt or sour cream on top for a little extra creaminess. If you don’t care about calories, swap bleu cheese dressing in. I use yogurt all the time though and I swear it does the trick just as well and I can put those saved calories toward more beer.

The nachos are simple but delish. Sometimes I caramelize some onions and throw those on with the chicken layer. If you have a killer nacho recipe, please share…they’re my weakness!
