Football Food for Fans ~ Week 11, Giants Versus Eagles

Our resident foodie pal Mark has been busy eating dumplings and other amazing things in China, so we haven't been able to enjoy a football food for the Birds every week this season, but he returned in a big way this week for the Eagles win over the Giants last night.

Last Monday night, my Tuesday morning [in China], my budding kept feeding me score updates of the Eagles demolishing the Redskins. Seemed like my Blackberry was buzzing every minute.

Anyway, upon my return, I wanted something tasty and filling. My local market had some beautiful homemade sausage. That was the base. I jacked it up with some garlic, jalepeno pepper, red pepper and, from my garden, chopped herbs: parsley, chives and rosemary. Seasoned it further with salt, pepper, and Hungarian paprika.

Once browned, I tossed in some shredded cheddar and Montery Jack cheeses, as well as a dollup of sour cream. I toasted some Italian bread. And fried up an egg. (Because, well, let's face it: Everything is better with a fried egg on top of it.)

The Return: Browned sausage with seasonings, herbs, red peppers, cheese and sour cream. Top with a fried egg. Top again with more sausage. Final toppings is sweet peppers out of the jar. Between toasted Italian bread.

On the side: Baked onion rings. In the glass: Sam Adams' Octoberfest.
