A revolutionary winemaker and visionary from maybe the most under-appreciated wine region of California is descending on New Jersey: pn Thursday, May 9th, Bill Easton will host a pop-up wine dinner at Blu on the Hudson. In the 1970s Bill founded Solano Cellars wine shop in Berkeley, CA which continues to be an essential institution today. He went on to found Terre Rouge & Easton Cellars—as well as be an OG member of the Rhône Rangers—a group of American winemakers who pioneered the Rhône varietals in California. Bill has been a luminary in the Sierra Foothills and continues to do boundary breaking work in the region.

Prepare to be amazed as Bill shares his winemaking process and unveils some of his most exceptional deep-aged vintage wines from his private collection. These include 2006 Roussanne, 1999 Zinfandel, and Ascent 2016, which was recently awarded a perfect 100-point rating from Wine Enthusiast and was #2 on their Top 100 List in 2020.

Executive Chef Juan Carlos will prepare a five-course tasting menu to pair with each varietal.

  • Hamachi Tartare: Kaluga caviar and Meyer lemon | paired with Easton Sauvignon Blanc 2020
  • Maine Lobster: finger lime and rhubarb | paired with Terre Rouge Roussanne 2006
  • Short Rib Tortellini: fava beans and shaved asparagus | paired with Easton Zin 2015 Fiddlehead or Easton Zinfandel 1999
  • Roasted Lamb Loin: morel mushrooms and crispy artichokes | paired with Terre Rouge Sentinel Oak Syrah 1999 or Ascent 2016
  • Spring Berries and Ricotta Tart: lavender and lemon | paired with Easton Muscat

Tickets are $200 per person and reservations are available on OpenTable.

Blu on the Hudson is located in Weehawken, New Jersey, which is a picturesque six-minute NY Waterway ferry ridefrom Manhattan and easily accessible to all New Jerseyans. The restaurant has spectacular views of the Hudson and Manhattan skyline.
