Dalton Rushing was born in Memphis, Tennessee, on February 21, 2001.  He played high school baseball at Brighton High School in Brighton, TN. He was the second-ranked catcher and the sixth overall player in Tennessee in 2019. As a senior, he hit .491 with 11 home runs and 46 RBI as he also earned All-State honors. Rushing was the 26th-ranked catcher nationally and ranked 235^th overall. He committed to play college baseball at the University of Louisville.

In 2021 he played in 28 games and slashed .254/.342/.463 with a .805 OPS; he had two doubles, four home runs, 14 RBI, nine runs scored, one stolen base, and eight walks. In the summer of 2021, he played in the Cape Cod Baseball League with Bourne playing in 34 games and he hit .314 with a .944 OPS; he had nine doubles, six home runs, 24 RBI, 23 runs scored, one stolen base, and 17 walks. In his final season at Louisville, he slashed .310/.470/.686 with a 1.156 OPS; he had 16 doubles, 23 home runs, 62 RBI, 68 runs scored, four stolen bases, and 50 walks.
