What Happens When A Top Chef & 100-Point Winemaker Collaborate?

All eyes these days are on the hip Sonoma County town of Healdsburg! From its dining scene which now boasts the #46 restaurant in the world on the World's 50 Best list, to its local vineyards that have produced 100-point wines. All things are heating up in this Sonoma County city. Which brings us to one of the hottest local collaborations, between Chef Dustin Valette & Winemaker Jesse Katz. Dustin Valette owns Valette, The Matheson Healdsburg, and has an eponymous wine label that recently brought in local hero Jesse Katz to collaborate. Jesse's brands include Aperture Cellars, Devil Proof Vineyards, and The Setting Wines where he has crafted 100-point wines AND a now infamous 6L bottle of The Setting Wines' 2019 Glass Slipper Vineyard Cabernet Sauvignon, fetching a record $1 million at a charity auction in New Orleans back in November of 2021.
