Oh jeez. It's 3 p.m. Sure, you have all the ingredients and the turkey is thawed and in the fridge, but first there was the parade, and then football pregame shows, and then... well, long story short, your family is coming by in an hour and you haven't started dinner yet. Never fear! We're here to help. There are plenty of Thanksgiving recipes that can be put together in a short period of time. Let's get to work.

Let's start simple with mashed potatoes. This lightning-quick recipe adds celery root to the spuds to add texture and taste, and the simple and easy preparation makes this recipe perfect for putting together when you might have something else cooking in the oven. Oh, but that said, there is one extra step we do recommend taking with this recipe — try grating some of your favorite cheese into the potatoes while you're mashing them. You won't regret it. Via Martha Stewart, here's a wonderful, super-easy, set-and-forget recipe for sauteed green beans that only takes about 25 minutes to prepare. Red onions provide much-needed tang and acidity to the dish, and since the recipe calls for cooking the beans first covered, and then uncovered until the water evaporates, you're guaranteed plump, crisp and tender beans every time. OK, before you start stressing out, don't worry. Making cornbread technically counts as baking, but it's super simple to do. Bon Appetit has a recipe that only takes about a half-hour to make, and the hardest thing you'll have to do is whisk together some eggs and milk with your dry ingredients — much like making pancake batter. Then, simply pour into a greased baking dish or, per our recommendation, a well-seasoned cast iron pan, and bake. Continuing with the carb-heavy portion of the meal, here's a recipe for stuffing via Betty Crocker that'll only take you 20 minutes. The nice thing about this recipe is that though it's delicious on its own, it's simple enough to be altered a bit. Though this salad looks incredibly impressive visually, it'll only take you a few minutes to prepare. The citrus-y dressing comes together in only around a minute or two, and the only other time-intensive part of the recipe comes when you crisp up some bacon. Other than that, as long as you have a mandoline (and take care not to slice the tips of your fingers off), you'll have yourself a delicious shredded Brussels sprout salad in around 10 minutes flat. If you prefer your potatoes whole, this brilliant recipe employs salt and vinegar to quickly season the potatoes from the inside out so they'll cook up golden brown and flavorful in a short period of time. After simmering, you'll want to finish the potatoes by sauteing them for about 10 minutes in butter to give them that beautiful crisp finish and then complete the dish with a splash of vinegar. If you've already figured out what to do with your turkey, making a quick gravy is super easy and quick. (And hey, if you haven't, we have some suggestions a couple of sides ahead!) This recipe from Better Homes and Gardens shows just how simple it can be. By combining butter, the fat drippings from your turkey and flour, you'll create a roux that you can then add more drippings and broth to. No time for dinner rolls? Biscuits to the rescue. This recipe, via Martha Stewart, takes 30 minutes start to finish and is just as good of a vessel for gravy and butter as those plain little bread balls. The addition of sage to the biscuits gives them a distinctly Thanksgiving-y flavor, and if you have a food processor, the dough is very easy to make. If you only have an hour or so to throw together a delicious dessert this Thanksgiving, look no further than "The Pie That'll Make You Cry," this pecan pie recipe courtesy of The Pioneer Woman. She recommends finely chopping the pecans so the pie slices come out more uniformly, and we'd second that. If you can manage to take 15 or so minutes to prep this and put it in the oven before you sit down to dinner, it should be done and cooled by the time everybody is ready for dessert. If your family prefers ham as the centerpiece of your Thanksgiving, don't worry — we've got you covered. Most recipes for baked ham take around four hours, but this one, via Taste of Home, only takes around 90 minutes. Make sure to purchase boneless fully cooked ham, since it'll cook faster than the bone-in version. And yes, you can finish your turkey from start to finish in just over an hour if you treat it right. Epicurious has the full step-by-step instructions, but the gist of the method is that first you butcher your bird, cooking it in parts so every section roasts up crispy and delicious.
