In a town where gambling halls, mobs of people, and flashy, in-your-face décor come standard at every hotel, The Westin Las Vegas’ unfussy offering stands out of the crowd. To start, the hotel isn’t even technically on the Strip: It’s tucked a block back, close but just far enough removed (in Vegas terms) from the raucous. The design—understated, earthy, and elemental—follows suit. There’s a Starbucks on-site, a heated outdoor pool lined with cabanas that are open around the clock, and a full-service spa. But the hotel’s defining feature is its casino, or lack thereof. It’s been replaced by a health-conscious restaurant called The Good Plate, which rocks a refreshing menu of salads, bowls, sandwiches, and entrees.
