Enjoy Memorial Day With Western BBQ

What's better on Memorial Day weekend than a western themed cookout with all the fixings?  Here we offer you some ideas to make and enjoy.

Main Dish

For your main dish, here are three options that your family and guests will rave over.

Cowboy Ribeye Steak

Season the steak with a simple blend of salt, pepper and garlic powder.  Grill over the open flame until they reach the desired doneness.  Serve with a pat of herb butter.

Rare 120-125 degrees = Very red, cool center

Medium Rare 130-135 degrees = Warm red center

Medium 140-145 degrees = Warm pink center

Medium Well 150-155 degrees = Slightly pink center

Well Done 160 degrees = Little or no pink

Barbecue Brisket

Slow-cook a beef brisket with a dry rub of paprika, brown sugar, chili powder, cumin, garlic powder, and black pepper. Smoke it for several hours, then finish it off with a tangy barbecue sauce.

Grilled Cowboy Burgers

Make hearty burgers with ground beef, onions, garlic, and Worcestershire sauce. Top with cheddar cheese, crispy bacon, barbecue sauce, and fried onion rings.

Side Dishes

What's a good BBQ and party without some stellar side dishes.  Here are three amazing options.

Campfire Potatoes

Slice potatoes and onions, then toss them in olive oil, garlic, rosemary, salt, and pepper. Wrap in foil packets and cook on the grill or over the campfire until tender.

Grilled Corn on the Cob

Grill corn on the cob, still in its husks, until charred and smoky. Peel back the husks and slather with a mixture of butter, lime juice, chili powder, and a sprinkle of cotija cheese.

Cowboy Beans

Cook pinto beans with bacon, onions, jalapeños, molasses, brown sugar, and a bit of barbecue sauce. Let them simmer until they are rich and flavorful.

Desserts

The perfect finishing touches to a day well spent is a delicious dessert handcrafted with love.  Here are a few sweet things to finish off your day.

Dutch Oven Peach Cobbler

Layer canned peaches (with syrup) and a mixture of flour, sugar, baking powder, and milk in a Dutch oven. Dot with butter and cook over campfire coals until the topping is golden and the peaches are bubbling.

A very simple way to do this is to use a yellow cake mix for the dry ingredients.

Grilled Pineapple

Slice a pineapple into rings, brush with a mixture of honey and lime juice, and grill until caramelized. Serve with a scoop of vanilla ice cream.
